It’s Tasteful Treasure’s Day folks!!! I’m doing a theme this week of a salad a day so I figured why not make a new healthy yummy salad from my new favorite cookbook!! Here it is!! Can we just say YUM!!! This serves 4 people.

Ingredients:

Dressing:
1 Tbsp. of sugar
2 Tbsp. of Red Wine Vinegar
1 Tbsp. of Water
1/8 Tsp. of Salt
1/8 Tsp. of fresh cracked pepper
2 Tbsp. of Extra Virgin Olive Oil

Salad:
4 Cups of Romaine Lettace
4 Cups of Spring Mix
2 Cups of quartered strawberries
12 oz. of skinless boneless chicken
1/3 Cup of red onion, sliced thin
4 tbsp. of pecans
4 tbsp. of dried cranberries
1/2 Cup of crumbled feta cheese (reduced fat)

What to do:

To prepare dressing, combine first 5 ingredients in a small bowl. Gradually drizzle in oil, stirring constantly with a whisk.

Cut your lettace up into bite size peices. Cut up your strawberries and onionsĀ and arrange on top of lettuce.

Sprinkle pecans and cranberries around. Place feta cheese on top, arrange chicken on top. Pour dressing and enjoy!!!

Usually I never finish a whole salad, but this time I did!!!! The dressing was awesome!
