I’ve seen this on so many cooking shows lately, just another way to change up your veggies, add a nice healthy side dish to a burger or just for a snack! YUM!!
2 Summer Squash

What to do:
With a vegetable peeler start peeling the veggies like you were taking the skin off. Keep peeling into strips until you reach the seeded area of the veggie. You’ll be able to tell when it gets tough in the center it’ll be harder to peel, stop at that point.
Cook in the microwave for roughly three minutes, this cooks it a little but still gives you a good crunch!!
Mix with olive oil (as much as you like) salt and pepper and stir! Wala!
Served great with Kabobs! I decided to do it with this dinner because I felt bad throwing away the rest of the veggies so instead I cut them up and made Grilled Balsamic Pork Kabobs!! YUMMO!
