Read it once, read it twice, then bring it to life by making your own. Feel free to vary the ingredients by what you may have in your fridge. Prepare the fixings as a salad-bar style for a little one too!
4 Cups of low fat chicken broth
1/4 Small onion, finely diced
1 tbsp. of olive oil
1 Garlic Clove, minced
1 Cup cooked whole wheat elbow macaroni
1/4 Cup cooked brown rice
1/2 Cup corn (Frozen or cooked)
1/2 Cup of peas (Frozen or cooked)
1 Cup of shredded chicken (or pork, shrimp or turkey)
1 tbsp. p|Parsley
1 tbsp. Italian Seasoning
1 tsp. Salt
1 tsp. Pepper
Grownup: Heat the chicken broth in a medium sauce pan. Heat the oil in a small skillet. When it simmers, add onions and garlic. Saute until the onions soften and begin to change color. Remove from the stove and let cool to room temperature. Place the cooked onions and the rest of the ingredients in individual serving bowls.
Together: Everyone can server themselves by putting whatever they like in a bowl.
Grownup: Ladle a cup of warm broth into each bowel.
