You can substitute with your favorite veggies, these just the ones me and my family love!! Super simple, I sometimes even cut everything up while my daughter is napping, put it in the fridge, so all I have to do come dinner time is pop it in the oven! These came out AWESOME tonight, I only used Zucchini and Summer squash tonight because well you have to make mashed potatoes with Ham!! It was so full of flavor and I apologize for no pictures, my camera battery died, I’m so mad because they looked great!

1 Large Sweet Potato, cubed
1 Zucchini, cubed
1 Summer Squash, cubed
1 Small Red Onion, cubed
2 Small Red Potatoes, cubed
1/4 cup of Olive Oil
2 tbsp of Basalmic Vinegar
1 tbsp of tyme
2 tbsp of rosemary
Salt and pepper to taste

Preheat oven to 375F
Spread all cubed veggies in a 13×9 baking dish. Toss with oil, vinegar and spices, salt and pepper. Cook for 20-25 minutes mixing the veggies around once half way through.
