We are back on the mend! Out and about for a playdate with one of our favs! The girls had fun and us momma’s got some momma time! Oh and my great score at Baby Gap, cute dress for MM for 22.99. I’m already thinking Spring! Then boo came home and proceeded to sleep for almost 3 hours LOL, how can I not enjoy this day! I got to do a fun post and some cooking. When speaking to my girlfriends recently, it made me realize that a post about certain topics were worth some investigation. All of us moms think about, Dicplining Your Child, Is Your Child Ready to be Potty Trained? Or of course, Pre-School topics. So check out my post from today: Making Decisions…. So what did this momma cook today? I made the Zucchini Pizza Casserole. It was soooooooo good, even my hubby said he could eat it all day everyday! WOW that’s quite amazing! LOL….We each only had one peice since our tummy’s are still a bit weak from being sick, we agreed that since we both shrank the belly’s and lost a few pounds that we would work on eating smaller portions again! So that means lots of leftovers! So to make it fun I took a lot of pics and I’ll walk you through how simple this can be.

So the first step is to make the “crust” so you need 3 zucchini’s. I cut them in half and used a hand shredder to shred the zucchini. (my late grandmothers hand grater, I’m so happy to be using it for the first time)

Once you shred all of the zuchhini you want to transfer it into a strainer, add some salt and let it sit for 10 minutes. Then you want to drain out all of the water using a paper towel.

The next step would be to transfer it back to the bowl, add your 2 eggs, 1/2 Cup of parmesan cheese and 1 Cup of Mozzarella Cheese. I then mixed it together with my hands. (like you do a meatloaf)

Spread the mixture out into a 13×9 greased pan to form a crust. Bake, uncovered at 400F for 20 minutes, you’ll see the mixture turn a light brown. While this is cooking Saute your chopped onion.

Add your Ground Turkey and seperate until browned.

Add your sauce or stewed tomatoes to the pan. I used some sauce and one can of diced tomatoes. Stir to warm in the pan and then transfer ontop of the zucchini cooked crust.

Once your peppers are chopped, add the remaining cup of mozzarella cheese and cup of cheddar cheese and top with peppers.

Bake in the 400F oven for 15-20 min, until you see the mixture slightly bubbling. Let stand for 5 mintues before slicing and serving like a pizza!!
