This is the easiest risotto you will ever make, it doesn’t take a lot of stirring. It’s a sweet dish which I like because you don’t need a lot of it and my picky 16 mth old daughter looooved it! 1 Cup of Arborio Rice
2 Cups of Water
1 Pkg. of frozen Butternet Squash
1 tbsp. of light butter

Defrost the frozen Squash in a sauce pan. While that is defrosting, boil the 2 cups of water in a seperate sauce pan using the cover. Once it comes to a boil add the rice and the butter and mix to combine. Lower heat to low medium, cover and let simmer for 20 min.

Keep stirring the butternut squash until it’s defrosted. Stir the rice a few times and once the water starts blending into the rice and rice becomes thicker/fuller add in your squash and put the cover back on to simmer for another 5 minutes. Once it gets thick remove from heat, uncover and let the rice sit for a few. Serve.
