I had left over ingredients from this past weekends St. Patrick’s Day shin dig so I figured why not make my own Nacho recipe!! The difference with this recipe is the salsa is Tomatillo! I had never tried it before, It’s really good!
1 Jar of Tomatillo Salsa (or you can make it home made)
1 Can of Black Beans, rinced & drained
1 Small diced tomato
1 Cup of 2% Mexican Cheese
1 Pkg of Nacho’s (I like to use blue nachos from the organic isle when I have them!)
Preheat your oven to 350F.
Spread your nachos out on a pan. Pour the Tomatilla Salsa on the nachos, spreading it around.
Next layer the beans on top, and the diced tomato on top of the beans.
Bake in the oven for 10 min. Then layer the cheese on top and cook for 5 more min until the cheese is melted!
