Another recipe from Tasteful Treasures…….maybe I should just post the whole book LOL!! This one is under the “Healthier” section….score! This was awesome!! Will surly be making this again!! Try it with the Enchirrotos!


2 tbsb. olive oil
1 Cup uncooked rice
1 large onion, chopped
1 large green pepper, chopped
1 tbsp. minced garlic
1 (14 oz) can of stewed tomatoes, undrained
1 1/2 Cups of water
1/2 tsp. hot pepper sauce


Heat oil in a skillet over medium-high heat. Add rice, onion, pepper and garlic. Saute for 3 minutes.

Stir in tomatoes, water and hot pepper sauce, breaking tomatoes with a spoon.














Bring to a boil. Reduce heat. Cover and simmer for 20 minutes  until liquid is absorbed and rice is tender. Stirring occasionally. Serves 4.














Note: Each serving provides 140 calories, 3 g of protein, 24 g of carbs, 4g of fat, 0 mg of cholesterol and 135 mlg of sodieum.
