Let’s welcome our next Featured Co-Host!! Marina is the creator, crafter, and baker of this one-woman blog called Domesticated Duchess. I remember loving her blog because she seems a lot like me in aspect of wanting to inspire people, share recipes, give ideas and bring out that creative side of people! Marina lives and works in Houston with her hubby and very adorable dog. When she’s not at work her passions spread all around from baking and cooking to decorating, designing and crafting. You have to check out some of her crafty ideas, I love this idea of a wedding gift!! My mouth is watering reading the recipe for her Skinny Peanut Butter Pie (don’t worry my hubby I’ll make these for you!!). As usual I had a hard time deciding what to make! I but decided to try her Creamy Cajon Chicken Pasta! Something else my husband will devour, why is it that us woman make what our men love?? Here is this momma’s version of Marina’s Dish:

Ingredients:

8 or 9 chicken breast tenderloins (basically chicken breasts cut into chicken strip sizes)
8 oz of linguine, cooked
4 teaspoons of cajun seasoning (Tony Chachere’s is hands down the best, but Lawry’s works too)
2 green onions
A bit of olive oil
1 cup of heavy whipping cream
1 cup of low fat milk (you can use 2 cups of whipping cream if you’re not worried about fat/caloric content)
4 tablespoons chopped sun-dried tomatoes (use more if you’d like)
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon black pepper (ground)
1/2 cup of parmesan cheese

What to do:

Cook pasta per directions on package.  Drain. Once cooked drain and leave in the strainer. Cut the chicken into bite size pieces and place in a ziplock bag. Pour the cajun seasoning on top.  Shake well.

Sauté in your skillet until chicken is fully cooked.  

Cut the scallions to get them ready.

In the pot where you made your pasta pour in the cup of milk and cream. (I used skim milk and light cream).

Add chopped green onion, cream and milk, tomatoes, basil, salt, garlic powder, pepper and heat until it bubbles.**

Cook on medium until it comes to a boil. Add the pasta and stir.

Add chicken and stir.

Add half of the cheese and stir. This should start to thicken the pasta. Add the other half of cheese and stir.

 

I did end up adding a half a tablespoon or so to the bottom of the liquid and stirred some more, once I took it off the heat it was PERFECT!!

 Serve, eat and forever change your life as Marina says!!! I added a little parmesan on top for fun! Cuz I love cheese, cuz I add cheese to just about everything!

I loved how creamy it was!! It felt like a dish you get at an italian restaurant, the tomatoes gave it an awesome taste to it too, so glad I ended up finding them, because the first time I went to the store I couldn’t find them, when I went again I found them, nor did I look at the price! LOL….so when it rang up and it read 5.99 I almost passed out. However it was worth it because my husand and I both liked it! And we realized we should put sun dried tomatoes in more things!! **NOTE: If your mixture in step three is not getting thick, add 1/2 tablespoon of flour
